1lb chicken breast
8 cups water
1 tbsp olive oil
3 minced garlic cloves
1 lg onion
2 cups shredded carrots
2 cups celery
1 can tomatoes
2 tbsp Worcestershire sauce
2 tbsp tomato paste
1 package Knorr vegetable soup mix
2cups cut up potatoes
2tbsp chicken base
Put the chicken in the pot and add the water. Bring to a boil and simmer till chicken is done.
Remove chicken from the pot and strain the chicken broth.
In a skillet add the olive oil then add the cut up onion and garlic.
Cook till translucent.
Add the carrots and celery cook another 3 minutes.
Then add the can of tomatoes minus the juice, the Worcestershire sauce and the tomato paste.
Mix the Knorr vegetable soup mix with some water.
Add the vegetable mix and the Knorr soup mix to the broth. T
Then add the cut up potatoes and boil over medium heat till done ( about 20 min).
When potatoes are done you can add the shredded chicken.
As far as the vegetables goes you can add other vegetables to your liking, e.g mushrooms if I have it available I add some mushrooms.
