Crunchy Carrot Salad


4 large carrots, washed, peeled and grated
30g feta, crumbled
2 tablespoons toasted flaked almonds
1 tablespoon chopped coriander
2 teaspoons currants
½ teaspoons cumin
The dressing:
2 tablespoons olive oil
2 tablespoon orange juice
1 tablespoon clear honey


Combine all salad ingredients in a bowl and mix well.
Combine dressing ingredients together in a screw top jar and shake well.
Pour dressing over salad, toss very gently and serve.
