Fish Fillets with Coriander


1 kg fish fillets, snapper or blue cod is ideal
sea salt and freshly ground black pepper
extra virgin olive oil
juice of 1 lemon
1/2 cup fish stock
1/4 cup dry white wine
2 tablespoons finely chopped coriander
2 cloves garlic, peeled and crushed


Preheat oven to 180 C
Lie fish in a shallow baking dish and sprinkle with sea salt and freshly ground black pepper, olive oil and lemon juice. In a small saucepan bring the fish stock and wine to the boil and reduce by half. Add the coriander and garlic and pout over the fish. Bake for 7 minutes or until the fish has just cooked through.
