Classic Devilled Eggs


Description

Devilled eggs are also called as, stuffed eggs, angel eggs, eggs mimosa, Russian eggs, dressed eggs, picnic eggs. Very popular appetizers with different variations across the world.

Ingredients

1 ripe avocado
3 hard boiled eggs
1 tsp garlic powder (can be substituted with grated garlic)
1 tsp onion powder (can be substituted with finely chopped onion)
1 tsp ground black pepper
1/2 tsp oregano powder (optional)
1 tbsp lime juice
Cilantro/coriander leaves for garnishing (optional)
Salt to taste

Directions

Peel and scoop up the avocado pulp in a bowl and mash it well.

Add garlic powder, onion powder, ground pepper, oregano powder, lime juice and salt. Mix well. Keep this prepared guacamole aside.

Remove the shells of hard boiled eggs and cut them into halves (lengthwise).

Remove the egg yolks.

Mix 2 egg yolks (use the third one for some other recipe) into the prepared guacamole and mix well.

Scoop up the mixture and place into each half of the egg whites.

Garnish with cilantro and serve these lovely healthy and easy devilled eggs either chilled or at room temperature.
