Scandinavian Beetroot & Potato Salad


Description

For this recipe beets can be boiled, steamed or roasted. Combined with potatoes, cucumber, apple, radishes and the creamy yogurt dressing, this salad has lots of taste and texture. Fresh herbs, parsley and dill, add colour and some amazing flavour. Serve this salad right away or chilled.

Ingredients

2 small beets, boiled, peeled and diced
2 small potatoes, boiled and diced
1 small green apple, chopped
1 small cucumber, diced
4~6 radishes, chopped
2 scallions, chopped
2~3 tbsp Greek yogurt
2 tbsp sour cream
2 tbsp dill, chopped (dried will do OK)
2 tbsp parsley, chopped
Salt and pepper to taste

Directions

Combine all the vegetables in a mixing bowl.

In a small mixing bowl, combine yogurt, sour cream, herbs, salt and pepper.

Add the dressing to the veggies and mix well. Serve right away or chill to serve for later.
