Warm Winter Salad with Turkey and Bacon

What a wonderful dinner tonight - warm winter salad. Fresh vegetables and some turkey and crispy bacon thrown in make this dish absolutely wonderful on a cold winter's eve.

This recipe serves 2.

Ingredients

6 smoked bacon strips
1/2 large turkey breast, sliced lengthways into strips
Long lettuce leaves, cut halfway
Handful of cherry tomatoes
2 avocados, peeled, destoned and sliced
1 baguette, sliced
Two handfuls of frozen peas
Seasoning
Salt
Pepper

Okay, here we go, very simple once you get going.

You'll need to find two frying pans or one frying pan and a wok. Either combination will do. In one frying pan / wok (preferably) you'll fry vegetables, in the other frying pan you'll fry bacon and turkey strips. Separating the frying process this way allows your bacon and turkey strips to roast and gain some crispiness. If you were to mix these in one frying pan, your bacon and turkey will become too moist when frying and will become quite chewy.

- So, grab both the wok and the frying pan and preheat them both on medium settings. Add a dash of olive oil to both of them. In the frying pan add turkey strips and fry them for a couple of minutes each side, then add bacon strips and fry for a further minute or two until everything is golden brown and bacon looks crispy. Add some seasoning, salt, pepper during cooking to your liking. Meanwhile add lettuce into the wok and keep tossing until wilted and browned a little, then add frozen peas and tomatoes. Continue frying until peas are cooked through. Season the vegetables with salt and pepper whilst frying.
- Once everything is cooked, add everything onto plates - put vegetables in first, then add turkey, then add baguette slices and top those with bacon strips. Repeat for the second plate.
