Herring Salad


Description

Herring salad is loved and considered one of the most delicious salads by Russians all around the world.

Ingredients

2 filet salted herring
2 potatoes
4 carrots
2 beets
2 eggs
1/2 cup green onion, finely chopped
1 cup mayonnaise

Directions

Boil vegetables together in one pan until they are fork tender, let them cool till room temperature and peel.

Hard boil the eggs.

Cut herring meat into little pieces (check for bones).

On a plate ( I used a plastic tube to make it circle) grate boiled potato on big slots of grater and form thin layer(about
1/3inch) in the middle of the plate.

Spread mayonnaise evenly on top in a thin layer. Use a fork to even the layers.

Then make a layer of herring.

Sprinkle chopped green onions on herring layer.

Spread mayonnaise evenly on top in a thin layer. Use a fork to even the layers.

Next layer would be the carrots (grate on big slots of grater) spread evenly.

Sprinkle chopped green onions. Spread mayonnaise evenly on top in a thin layer. Use afork to even the layers.

Next layer the beets (grate on big slots of grater), spread evenly. On top pour mayonnaise (spread evenly, cover well).

Prepare this salad night before your serving day.

Grate the eggs, scatter over the top. Garnish with chopped green onions, parsley or dill.
