White Bean, Feta & Mint Salad


Description

This hearty salad is full of flavour from lemon, mint and feta and makes a wonderful addition to any midweek supper. Beans are a useful budget ingredient, making this easy salad a great low cost recipe. You can use any kind of beans that you have available to make it even more budget friendly, and I sometimes like to change it up and use broad beans or peas instead, or use a mixture of them all. Adding in peas gives it a great of colour and bumps up the protein content too.

Ingredients

350g cannellini beans, cooked
50g feta, crumbled
10 mint leaves, finely chopped
4 spring onions, sliced
1 lemon, juiced
1 tbsp of olive oil
2 garlic cloves, crushed
1 pinch of sea salt
1 pinch of black pepper

Directions

1. Place the cooked beans in a large bowl with half of the crumbled feta, half the mint leaves and half the spring onions.

2. Add the lemon juice, olive oil, crushed garlic and seasonings and mix everything together until fully combined.

3. Transfer to a serving dish and sprinkle over the remaining feta, mint and spring onions to serve.
