Rhubarb and Strawberry Crumb Cake - 1


For crumbs:
100g Flower
100g soft butter
50g brown sugar

For base:
50g brown sugar
200g rhubab
200g strawberries
25g butter
1tbs ground ginger
¼ lemon juice.


Crumbs: Mix sugar, flower and soft butter until you get crumbs.
Base: Peel rhubarb and cut into pieces.  Cut strawberries into halves.  Put butter into frying pan, when hot add rhubarb, strawberries and fry mixing in sugar, ginger and lemon juice. Fry until rhubarb is soft.
Best is to use ceramic dish (ready to eat from). Place strawberries with rhubarb, cover them with crumbs and bake into 180 degrees oven for 30-4- min until nicely golden brown.
