Ingredients

1kg pork meat
200g (aprox) smoked bacon
3-4 garlic cloves
Pinch of dried thyme
Freshly ground black pepper
Salt

Method

Rub in chopped garlic, salt, pepper, sprinkle with thym.
Cover with strips of bacon.
Leave to marinate for 1-2 hours.
Wrap the meat into baking foil and cook in the oven for 1-1.5 hours at 180-190°.
Serve with Cranberry Sauce.
