Scottish Skirlie


Description

Skirlie has been described as ‘a mealie pudding without the skin’, Not strictly accurate but not a bad description. Perfect accompaniment to your chicken or turkey dish.

Ingredients

175 g oatmeal
50 g butter or dripping
1 onion, finely chopped
Salt and pepper

Directions

Melt the butter or dripping over medium heat and add the onion.

Stir until onion is lightly browned, then add as many oats as you need slowly until all the fat is absorbed and the mixture is fairly firm.

Add the seasoning to taste and keep stirring for about 6-8 min.
