Perfect Pancakes with Tasty Filling

One day I sat down and wondered - should I make simple pancakes or should I push the boat out and try a filled pancake recipe. I decided it was worth a try and decided to make a perfect pancakes with healthy pancake fillings. In fact, I focused on one main filling - cottage cheese, some jam and lots of berries. This kind of filling and a pancakes that were filled with it could be comfortably filed under the pancake dessert fillings. So, I got to work, I made the pancakes, I made the filling, I then put some cottage cheese, jam and berries in the middle and rolled them up. And oh my god, these were so good that I cannot begin to describe. I got my protein fix while getting maximum taste. I recon that these would even be good gym food. Some carbs and lots of protein as well as healthy stuff like fruit.

So, give it a try and see what you think - a workout food or a breakfast snack, the choice is yours!

It will serve 2 - 3 individuals.

Ingredients

For pancakes:
2 eggs
2 tablespoons of sugar
1 pinch of salt
2 tablespoons of olive oil
350ml of milk
50ml cold water
200g plain white flour (sifted)
2 tablespoons of olive oil

For filling:
250g cottage cheese
5 tablespoons of runny strawberry jam
1 cup of fresh berries

For frying:
Knob of butter or dash of olive oil

Directions

1. Mix all the ingredients with the exception of water and flour.

2. Add flour and mix it in. This should result in a thick mixture.

3. Next your goal is to make the mixture consistency roughly the same as that of single cream. Not all flour is the same therefore consistency can vary, so amount of water/milk must be adjusted. So, first add 350ml milk, mix it in and check the consistency, if too thick, then add the water mixing it in until you get single cream consistency. If you think you need more then 50ml water with the flour you are using, then feel free to add a little more.

4. If you have time, leave the remaining mixture to rest for 30mins and let the flour absorb the liquid, if the resulting mixture looks too thick, add a little more water. This step is not necessary, however can add to perfection.

5. Before you begin frying, prepare the filling. You can use your imagination, anything works, Nutella, or sugar, or double cream, or jam, or cottage cheese, or fresh berries with some syrup perhaps, or a combination. We opted for cottage cheese and mixed it with a good few tablespoons of runny jam to make it a little sweeter.

6. Now get a non stick frying pan, heat it up on med heat, add a knob of butter or a dash of olive oil, pour the mixture in to cover the frying pan surface being careful not to make it too thick. Fry one side until golden, flip and repeat for the other side. You can check the progress by using a spachelor and peeking below it by lifting an edge.

7. Serve and enjoy whilst hot. Put the filling in the middle and roll them up. Sprinkle with berries, or include them in the filling before you roll.
