Description
Fantastic recipe using tapioca, an ingredient popular in Brazilian cooking. Tapioca starch can be found in Asian, Portuguese and Brazilian shops.
Ingredients
1 large egg
30g tapioca starch
30g ricotta
5g parmesan
15g cheddar
Salt and black pepper, to taste
Directions
1. In a blender add all ingredients and mix well for about 3 min. Keep to one side. Place a knob of butter in a non-stick crêpe pan over medium heat.
2. Add 2 ladles of pancake batter to the pan and cook for 2 min, until light brown, turn the other side and cook for another min.
3. Serve immediately with a dusting of Parmesan cheese on top.
