Creamy deliciousness to your usual eggs on toast. This is a very simple recipe inspired by healthy living, the key is to simply put all these ingredients together and walla, you have a delicious healthy snack or meal.
Wholegrain toast or a slice of rye bread
Ripe avocado (stone removed, sliced)
Eggs (poached, scrambled or fried - your choice)
Small handful of Parmesan cheese and seeds to garnish
Poach, scramble or fry an egg.
Boil some water in a medium pan and turn down to simmer. Add 1 tbsp. of vinegar. Carefully crack the egg into the water and boil for 2.5 - 3 minutes until the egg whites harden up.
Crack the egg into a bowl, whisk the egg with a fork or a whisk to break it down to a mix - you don't have to overmix as it will not really matter. Pour the whisked egg into a heated frying pan with a little olive oil and gently stir for approx. 2 minutes to get a nice scrambled consistency
Fry the egg on some olive oil - approx. 2 mins until the egg whites turn white. This should leave the yolk soft in the middle.
Now for the remainder -
Get the toast / rye bread slice and put some sliced avocado on top, then add the egg on top. Finally, top with a small handful of grated Parmesan cheese and sprinkle some seeds of your choice.
