So we were sitting here this evening and thinking that we would like to make something other than our usual meals, something tasty but something on the healthier side. Healthier side means vegetables and some protein which means eggs. You know what this combination could mean? Egg fried rice of course. We enjoy egg fried rice when we order from a Chinese takeaway and it is something I always look forward to, so why not make something similar at home. Here is my attempt at egg fried rice with some veggies and bacon thrown in. You may ask, why bacon? Well bacon gives it a lovely kick, lovely saltiness that reaches the tip of your tongue. Of course, you can make it without bacon and make it a vegetarian option, but in my case, I like bacon, and let me tell you, it turned out just wonderful. Tasty to the max. Enjoy.
