Beef & Vegetable Purée


Description

Beef is rich in protein, calcium, folate and iron. Home made beef bone broth can be used to thin down purees and make them smoother.

Ingredients

2 small potatoes, peeled and diced
250 g stewing beef, cubed
2 carrots, peeled and diced
2 tomatoes, mashed
1 cup homemade vegetable stock or water

Directions

In a large deep skillet, over medium heat, combine the potatoes, beef, carrots, and mashed tomato and cook until soft. Add stock or water to keep the mixture moist whilst cooking.

Cover and simmer until potatoes are of mashing consistency, and the liquid is almost gone (about 20-30 minutes), add additional liquid as needed to keep the mixture from browning.

Remove ingredients from heat and place in a food processor or blender. Puree using a little extra liquid to get the desired smooth consistency.
