Apricot, Banana & Cinnamon Porridge


Description

Apricots are extremely nutrient rich fruit for baby food. They are rich in beta carotene, vitamin C and lycopene, have the high level of iron. They act as a gentle laxative and also help in brain development. Apricots provide great flavour to otherwise bland dishes and are absolutely delicious mixed with yoghurt for breakfast, or chicken for dinner.

Ingredients

1 cup oatmeal
1 banana
1/2 cup apricots, pitted and diced
3 cups water

Directions

In a medium pot, bring water to boil. Add steel cut oats and stir. Bring to boil. Simmer for 20-30 min or until all the water is absorbed and the oats have cooked through. (Quick oats will take less time than traditional oats.)

Place apricots in small bowl and cover with boiling water. Let soak for 10-20 min.

Combine all ingredients in the food processor and serve pureed.
