Creamy Purée with Spinach, Curd & Rice


Description

Curd is the product of bacterial fermentation of milk and it is good for babies who are lactose intolerant, as during the fermentation lactose is converted to lactic acid and is then easier to digest. Along with all nutrients from the milk, curd is rich in good bacteria that strengthen the immune system. It also has beneficial enzymes to help with digestion.

Ingredients

1 cup rice (200g)
1.5 cup of home made stock or water
1 cup spinach
50g curd

Directions

In deep skillet, over medium heat, put rice and cook about 15 min. Add stock or water to keep mixture moist whilst cooking.

Add in spinach and cook for 5 min.

Purée spinach, rice and curd in a food processor or blender, using a little of the cooking liquid to get a desired smooth consistency (approx 2 tbsp). You can also use breast milk or formula to mix with the purée.
