Halloumi, Quinoa and Avocado Wonder

Were you searching for a healthy meal? Perhaps for lunch or dinner? Try this wonderful meal and enjoy the goodness of all the ingredients and the satisfying feeling of a fantastic meal. All the ingredients are healthy and this recipe is very easy to make.

Ingredients

250g halloumi cheese (sliced in 1inch thick long pieces)
100g quinoa
3 eggs (hard boiled and sliced in half)
2 avocados (sliced into long slices)
2 spring onions (sliced into small pieces)
Salt
Pepper

Directions

1. Slice everything and prep boiled eggs
2. Boil quinoa according to packet instructions
3. Brush both sides of halloumi cheese with olive oil and place into a grill on medium setting - 2 mins each side until each side starts to take on grilled colour. You can also do the same with the frying pan if you wish.
4. Arrange everything on a plate - put quinoa first, then cheese on top, avocado next, then eggs and finally sprinkle some spring onions on top. Add salt and pepper if you wish.
