Chicken, Apricot & Veg Mash with Garam Masala


Description

This fruity chicken and apricot mash is delicious and the garam masala gives it a mild curry flavour. Garam masala is an aromatic mixture of ground spices and available in most supermarkets with the herbs and spice jars. It’s a good way to add flavour without adding salt. Suitable from 7 month and also suitable for freezing.

Ingredients

1 tsp olive oil
50 g onion, peeled and chopped
50 g apple, peeled , cored and chopped
75 g carrot, peeled and diced
200 g butternut squash, peeled and diced
1 clove garlic, crushed
4 ready to eat dried apricots, chopped
1 chicken breast, diced
1/4 tsp garam masala
400 g can chopped tomatoes
100 ml water

Directions

Heat the oil in a saucepan and add the onion, apple, carrots, squash, garlic and apricots and cook, stirring for 2 min.

Add the remaining ingredients, bring up to the boil, cover with a lid and simmer for about 15 min.

Blend to desired consistency.
