Turkey with Mash and Creamy Mushroom Sauce


Description

This turkey recipe is a fantastic dish for lunch or dinner. This recipe makes the turkey juicy swimming in a creamy mushroom sauce all poured over a tasty potato mash. Yum yum yum.

This recipe serves 2.

Ingredients

300g turkey breasts, diced
2 white onions, finely chopped
100g button mushrooms
100g chestnut mushrooms
Salt
Pepper
Sprig of parsley, chopped
Sprig of dill, chopped
5 large white potatoes, peeled
Chicken spices (any)
300ml Milk (approx 1 cup for sauce and 1/2 cup for mash)
1 tbsp white flour

Directions

- Get a pan and add water and a dash of salt. Stick potatoes into the pan and boil until softened.
- Season turkey with your favourite seasoning. Add some pepper to the seasoning if you like it a little spicier. We used standard chicken seasoning.
- While boiling potatoes, in one frying pan put a dash of olive oil and fry diced turkey on medium setting until browned and juices run clear.
- At roughly the same time, add a dash of olive oil and chopped onions to a saucepan and cook on medium setting until onion has softened.
- When turkey has browned, add mushrooms to the frying pan and continue frying for another 2-3 minutes until mushrooms soften, then add the onion from the saucepan. Add parsley.
- In a cup mix milk with 1 tablespoon of flour. Mix well so there are no lumps.
- Add milk to the frying pan and mix in with all the ingredients.
- Continue frying whilst slowly stirring everything until it all warms up and reduces to your desired thickness.
- Back to potatoes, now they should be soft and done. Mash potatoes up adding a little milk (1/2 cup approx). Mix in dill to potato mash.
- Put potato mash onto the plates first, then add the frying pan ingredients on top.
- Done
