Beef Chow Mein


Description

Easy home-style beef chow mein with egg noodles, oyster sauce and seasonings.

Ingredients

Noodles:
280g egg noodles

Sauce:
1/4 cup oyster sauce
2 tbsp soy sauce
2 tbsp sweet chilli sauce
3 tbsp water
1 tsp sesame oil

Beef and vegetables:
500g lean beef mince
2 carrots
1 baby bok choy
1 tsp chow mein spices (1/4 tsp onion powder, 1/4 tsp ground ginger, 1/2 tsp garlic powder)
1½ cup frozen peas

To serve:
1 spring onion

Directions

Cook noodles:
Bring a medium pot of hot, salted tap water to the boil with a lid on. Once boiling, add noodles and cook for about 8 minutes, until tender. Drain and return to pot with a drizzle of sesame oil to avoid sticking.

Make sauce:
Combine all sauce ingredients in a bowl.

Prep veges and cook beef:
Grate carrots and thinly slice bok choy and spring onion. Heat a drizzle of oil in a large fry-pan (or wok) on high heat. Cook beef for 4-5 min, stirring until browned. Add chow mein spices and cook, stirring, for about 1 min, until fragrant. Add carrots, bok choy and peas and cook further for about 2 min, until veges are just tender.

To finish:
Add noodles and sauce to pan with beef and veges. Toss to warm through and season to taste. Add a pinch of chilli flakes for adults.

Serve chow mein sprinkled with spring onions.
