Smoked Salmon Omelette


Description

This simple and delicious omelette is brimming with luscious smoked salmon and is a perfect brunch dish to kick off at any time of the day.

Ingredients

1 tsp rapeseed oil
2 eggs (lightly beaten)
25g mushrooms (optional), sliced
1 tsp chives (optional), chopped
50g smoked salmon (into ribbons), sliced
Ground pepper (to taste)

Directions

Heat the oil in a small frying pan.

Season the eggs with pepper, then add them to the pan.

Stir gently until the egg starts to set.

Using a wooden spoon, draw the edges toward the centre, allowing the raw egg to run into the spaces.

If using, sprinkle the mushrooms and chives over the omelette, then lay the strips of salmon on top.

Turn the heat right down and cook for about 5 min until the egg is firm.

Serve with a salad on the side.
