Description
Biryana Masala it’s a blend of whole spices lightly roasted and powdered. The blend is similar to garam masala, but has even more spice flavours to it.
Ingredients
4 cm piece cinnamon / Pattai
2 tsp fennel seeds / Saunf / Sombu
1 tsp cumin seeds / Jeerakam
2 bay leaves
5 green cardamom pods / Yelakai
1black cardamom pod
5 cloves / Kramu
2 mace / Jathipathri / Jatiphala
4 Black Stone Flower / Kalpasi
3 tbsp coriander Seeds / coriander powder
4 to 5 / 1 tbsp dry red chilli / chilli powder
1 Star anise / Anisipu
1 tsp whole black pepper / Nalamilagu
Directions
Take all the ingredients in a dry pan and roast it on low heat for 5 min till it is well toasted. If using dry red chillies and coriander seeds add it along with other spices while toasting, if using coriander powder and chilli powder, add that after the whole spices are well toasted. And give a quick toss for 30 sec.
Remove them to a plate and let it cool down for 5 mins.
