Vegetables, Turkey Mince and Buckwheat


Description

This absolutely wonderful and healthy turkey recipe is a good one for lunch or dinner, up to you. Tasty combination, no need for lots of seasoning, so all is natural. For these kind of recipes I tend to include buckwheat rather than rice as it tastes delicious and is a very good source of many different vitamins and minerals, search for it on google and you’ll see what I mean.

This recipe serves 1, feel free to vary amounts based on how hungry you are and try to use all organic ingredients if you can.

Ingredients

Handful of turkey mince
Small punnet if asparagus
Handful of button mushrooms, whole
Half a courgette, sliced
1 brown onion, sliced
Salt
Pepper
Handful of buckwheat
1 carrot, sliced
Cheddar cheese, grated

Directions

Very simple - slice up all your ingredients, then fry them, boil buckwheat and serve together garnishing with some cheese. Here are some more detailed instructions:

- Start by washing your buckwheat in a colander. Then bring some water to boil and add buckwheat in, add a dash of salt and cook for approx 10 mins. Approx same amount of time that you will fry ingredients for.
- At same time heat up a frying pan with a good dash of oil.
- Add turkey mince, fry until brown.
- Add carrots and fry for a couple of minutes, then add mushrooms and courgette and fry for another couple of minutes, then add the onion and asparagus, and fry until ingredients soften up and brown a little. Add a dash of salt and a good sprinkling of black pepper whilst frying.
- Drain buckwheat, add to a plate, tip the frying pan ingredients onto the buckwheat and garnish everything with grated cheese. I used cheddar in this case, but mozzarella is also wonderful here.
