Ginger & Lemon Ice Lollies


Description

Super easy to make and very refreshing ice lollies. If you don’t have little sticks, freeze it into small ice cube tray, then serve them in a glass with soda water and sprig of mint for a cooling mocktail.

Ingredients

100ml lemon juice
100g white sugar
5 slices fresh ginger
250ml water

Directions

1. Into a saucepan, place the lemon juice, sugar, ginger and water. Bring to a simmer until the sugar is dissolved. Remove from the heat and allow to cool.

2. Strain through a sieve and pour into your ice cube moulds or ice trays. Insert wooden sticks. If your sticks won’t stand up straight, freeze the ice blocks for 30 min, then add the sticks.
