Pasta with Lemon & Herb Sardines


Description

Unbelievable simple and quick dish with sardines and pasta to put together and your next day's lunch box is ready!

Ingredients

1 small can sardines in flavoured oil, such as lemon and herbs
75g wholewheat penne
2 tbsp frozen peas
5 pitted olives in brine
1 handful of rocket salad
Black pepper
Lemon zest and wedge for garnish garnish

Directions

1. Cook the pasta according to the instructions in a large pan of unsalted water, adding the peas for the last 3 minutes. Drain well and return to the pan.

2. Add the sardines, 1 tbsp of the oil from the sardines, the olives and the rocket leaves, and season with black pepper. Toss together gently.

3. Grind over some black pepper, sprinkle over the lemon zest, and serve with the lemon wedge on the side.
