Description
Simple and tasty chowder with smoked mackerel.
Ingredients
30g butter
1 bunch of spring onions, finely chopped
1 large baking potato, peeled and finely diced
2 sticks celery, sliced
2 cloves garlic, chopped
1 heaped tbsp plain flour
500ml skimmed milk
4 fillets smoked mackerel, skin and bones removed and flaked
1 large coley fillet, pin-boned and thickly sliced
2 tbsp chopped parsley
Salt and freshly ground black pepper
Directions
1. Melt the butter in a large saucepan. Add the spring onions, diced potato and garlic. Stir over a low heat for 7-8 min or until the potatoes are beginning to stick to the pan.
2. Stir in the flour and blend in the milk. Bring to the boil and simmer for 7-8 min or until the potato is soft.
3. Stir in the smoked mackerel and coley and cook over a low heat until the fish is cooked.
4. To serve, check the seasoning and add the chopped parsley.
Tips:
Coley fish can be substituted with cod or other white fish.
