Cauliflower & Leek Soup


Description

Simple and healthy vegetable soup.

Ingredients

1 head of cauliflower, cut into bite sized pieces
Butter for sauteing
1 leek, white and lighter green parts, chopped
2 cups broth (I used veggie)
3/4 cup whole milk
1 tbsp coriander
1/2 tbsp white pepper
Salt to taste
Chives for garnish

Directions

1. Saute leek in butter, then add cauliflower, broth, coriander, white pepper. Simmer until cauliflower is tender.

2. Puree in blender in batches with milk.
