Yellow Split Pea Soup


Description

Easy and great pea soup recipe. Add ham or kielbasa or add frozen mixed veg sometimes, too. Remind of a tin of store bought - flavour and consistency is perfect,

Ingredients

2 medium white onions, cut into 1 inch cubes
3 -4 cloves garlic, smashed
2 cups yellow split peas, about 1 lb
1 tsp dried oregano (optional)
1⁄2 tsp dried thyme (optional)
1 tsp salt
1 tsp freshly ground black pepper
1⁄8 teaspoon hot sauce (optional)
1 cube of organic chicken broth
Olive or rapeseed oil

Directions

1. Heat some oil and put the onions in a large non stick saucepan over medium low heat.

2, Cook for about 5 min, stirring constantly, until the onion is wilted and translucent.

3. Add the garlic, stir and continue to cook for 1 min.

4. Stir in the split peas, then the seasonings, hot sauce and the broth.

5. Raise the heat to medium and bring to a boil.

6. Reduce the heat to low, cover, and simmer for about 1 h, until the soup is fairly thick.

7. Remove the cover and stir well before serving.
