Description
Lovely chicken dinner,
Ingredients
1 tsp olive oil
1 red onion, thinly sliced
2 cloves garlic, thinly sliced
250g button mushrooms, thinly sliced
1 tsp olive oil
600g lean, free-range chicken breasts, sliced 1 cm
3/4 cup chicken stock
2 courgettes, halved lengthways & thinly sliced
3/4 tsp cornflour
1/2 tsp salt
125g lite sour cream
200g spelt spaghetti (e.g. San Remo)
1/2 punnet cherry tomatoes, halved
4 tbsp chopped parsley
Directions
1. Bring a pot of salted water to the boil.
2. Heat first measure of oil in a fry-pan on high heat. Cook onion and garlic for 1-2 min, until soft. Add mushrooms, season, and cook for a further 2-3 min, until tender. Transfer to a bowl and keep pan on heat.
3. Add second measure of oil and chicken to pan, season, and cook for 3-4 min, until almost cooked. Return mushroom mix to pan along with stock, courgette, cornflour and salt and cook for 2-3 min, until chicken is cooked through and liquid has thickened.
4. Remove from heat, stir through sour cream and season to taste.
5. While sauce cooks, cook pasta in a pot of boiling water for about 8 min, until tender. Drain, return to pot and keep warm.
6. Prep garnishes.
7. Serve pasta topped with chicken - mushroom sauce. Sprinkle over cherry tomatoes and parsley.
