Description
This Italian chicken dish is one of the quickest dishes you can make. The balsamic vinegar adds a wonderful flavour to the chicken.
Ingredients
2 tbsp of extra virgin olive oil
1 red onion, sliced
4 cloves of garlic, chopped
4 boneless skinless chicken breasts
1 28 oz can of diced tomatoes
1 tbsp of dried basil
1 tbsp of dried oregano
1/2 tsp salt
1/2 tsp fresh ground black pepper
1/4 cup of balsamic vinegar
1/4 cup fresh flat leaf Italian parsley
Directions
1. Saute onion and garlic in oil for about 5 min in a large skillet. Remove and set aside.
2. Fry chicken breasts until browned on both sides.
3. Add garlic and onion back into pan.
4. Add tomatoes.
5. Sprinkle with basil, oregano, salt and pepper.
6. Pour balsamic over chicken.
7. Cover and cook for about 20 min.
8. Plate chicken and top with tomato and onion mixture. Sprinkle with fresh parsley.
TIPS:
I have used diced turkey, please, improvise, you will never go wrong with this recipe.
