Egg Fried Rice with Bacon and Vegetables

So we were sitting here this evening and thinking that we would like to make something other than our usual meals, something tasty but something on the healthier side. Healthier side means vegetables and some protein which means eggs. You know what this combination could mean? Egg fried rice of course. We enjoy egg fried rice when we order from a Chinese takeaway and it is something I always look forward to, so why not make something similar at home. Here is my attempt at egg fried rice with some veggies and bacon thrown in. You may ask, why bacon? Well bacon gives it a lovely kick, lovely saltiness that reaches the tip of your tongue. Of course, you can make it without bacon and make it a vegetarian option, but in my case, I like bacon, and let me tell you, it turned out just wonderful. Tasty to the max. Enjoy. This recipe serves two.

Ingredients

1 small red onion, diced into small pieces
4 eggs
1 handful of cauliflower chunks
1 handful of broccoli chunks
Pepper
Salt
1 dash of soy sauce
3 handfuls of white rice (long grain or any that suits you)

Directions

0. Step 0 because this step is to boil some rice salted to your liking and cool it down. Ideally this dish is made with left over rice from the previous day so that there is no moisture, but it is possible to cheat. So, boil the rice until the rice is as you like it, but keep it on the firmer side as you'll need to fry it and you won't want them becoming mushy. Once the rice has boiled, drain the water and set the rice aside to cool. Make sure you let the rice cool first before you start on the following steps.

1. Break open 3 eggs into a bowl and whisk them together. Break 1 egg into a separate bowl and whisk it. The reason for having these split into two bowls is that you'll use them at different times. This will produce nice texture and will add to the look of the dish.

2. Heat a large pan or a wok on medium, add a dash of some olive oil. Once hot, add the 3 whisked eggs in and scramble them (approx. one minute), then remove them into a separate dish and set aside. Wash out the pan.

3. Heat the wok or pan on medium again and add some olive oil. Once hot, add in cauliflower and broccoli. Fry for 2 minutes stirring, then add in onion and fry for another 2 minutes stirring continuously.

4. Add the cooked cooled rice and mix it in. Break up any large lumps as you won't want to eat lumps. Fry until the rice is heated through - 1 minute or so. Pour the remaining 1 whisked egg in and mix all ingredients together. Cook this for another 1 minute.

5. Add soy sauce and some pepper, mix it in. Now add the 3 scrambled eggs that you had set aside earlier and mix those in, heat them through stirring for another 1 minute.
