Chicken & Bacon Lasagne


Description

Another variation of lasagne with chicken and bacon. The beauty is that you can experiment with smoked or unsmoked bacon and adjust quantities to your liking.

Ingredients

Lasagne:
1 brown onion, finely diced
1 carrot, grated
500g chicken and bacon mince blend
2 tbsp lasagne spices (1/2 tsp oregano dried, 1/4 tsp basil dried, 1/4 tsp dried rosemary, 1/2 tsp dried sage, 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp tomato powder, 1 tsp brown sugar)
1x 400g can chopped tomatoes
1/2 cup beef stock

Cheese sauce:
2 tbsp butter
2 tbsp flour
1 cup milk
1/2 cup grated Parmesan cheese

To assemble:
250g fresh lasagne sheets
1/2 cup grated Parmesan cheese

Salad:
100g rocket
Olive oil
Balsamic vinegar

Directions

1. Prepare and cook lasagne: Preheat oven to 200C. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion and carrot for about 3 minutes. Add mince and cook, stirring, for 4 minutes.

2. Add spices: Add lasagne spices and cook, stirring, for 30 sec, until fragrant. Stir in chopped tomatoes, water and a splash of soy sauce and leave to simmer on low-medium heat for about 6 minutes, until thickened. Season to taste.

3. Make cheese sauce: Melt butter in a pot on medium heat. Whisk in flour and cook, stirring, for about 2 minutes, until it turns a sandy colour. Add milk in thirds, whisking until smooth. Cook for 2-3 min, whisking, until sauce has thickened. Remove from heat, add first measure of cheese, season and stir until smooth.

4. Build lasagne: In a baking dish (approx. 20 x 28cm), spread a quarter of the lasagne mix to cover base. Lay pasta sheets in a single layer to cover snugly, cutting to fit if needed. Spoon over another quarter of the lasagne mix. Repeat with remaining pasta sheets and lasagne mix, finishing with lasagne mix.

5. Pour over cheese sauce, sprinkle over second measure of cheese and bake for about 25 min, until golden. Remove from oven and rest for a few minutes before serving.

6. Make salad: Toss rocket in a bowl with a drizzle of olive oil and vinegar. Season to taste.

7. Serve lasagne with salad.
