Description
Fantastic savoury snack could be seriously addictive. When roasting nuts try to keep the temperature lower (150°C) and cook a little longer to avoid burning and protect the delicate oils of the nuts. This basic recipe can be varied to suit tastes, see tips.
Ingredients
3 cups mixed nuts such as almonds, cashews and walnuts
1 tbsp extra virgin olive oil
1 tsp mild curry powder
1 tsp smoked paprika
1/2 tsp salt
Directions
1. Preheat the oven to 150°C. Line a shallow roasting tray with baking paper.
2. Place the nuts, olive oil, spices and salt into a bowl and mix well to evenly coat the nuts. Spread in a single layer on the prepared tray and place in the oven for 10 min.
3. After this time shake the tray to move the nuts around for evening cooking and roast for another 10-15 min until golden. Remove from the oven and cool on the tray.
4. Scoop into small 200g jars and attach a string and label.

Flavour variations:
Replace the curry powder and smoked paprika with:
2 tsp finely chopped rosemary and 1/2 teaspoon garlic powder
1 tsp cumin, 1 tsp paprika and 1/2 tsp chilli flakes
