Oven Baked Salmon with Dill & Lemon

With this recipe you can get a perfectly succulent and moist piece of salmon when you don't have a lot of time on your hands but still want to make lovely dish for your family or friends.

Ingredients

1 half of salmon filet
1 tbsp olive oil
4 tbsp dill, roughly chopped
1 lemon
Salt and pepper

Directions

1. Preheat oven to bake 200 degrees celsius. Line a large baking tray (ideally with a raised edge) or large dish with baking paper.

2. Pat salmon fillet dry with paper towels, and place skin side down on the baking paper. Using tweezers, carefully remove any pin bones from the salmon fillet - the best way to do this is to pull them out in the same direction they're orientated in, otherwise the flesh might rip.

3. Drizzle over olive oil and rub all over fillet. Season well with salt and pepper. Sprinkle over the chopped dill evenly. Slice lemon evenly and thinly, and place over top of the fillet.

4. Bake in the middle shelf of the oven for 20 min, or until just cooked through - when the salmon is easily flaked with a fork it's ready to be enjoyed!
