Peach Chicken


Description

A mouth watering recipe for chicken thighs baked in orange juice with peaches. Who would have thought that this would taste so good! Well we'll let you be the judge of that and taste it for yourself. The combination works very well - tender chicken pieces that fall apart yet remain juicy. This dish has a delicious fruity and sweet taste. Maybe not quite the traditional sweet and sour, but something not dissimilar, perhaps better!

This recipe should be sufficient for two for two meals. You can reheat the chicken together with the sauce for another delicious meal. The reheated chicken will actually taste as if you have just freshly made it.

I would suggest to make it with rice and to use all organic and fresh ingredients (other than the peaches). This dish is truly delicious. Enjoy.

Ingredients

500g to 1kg chicken thighs
1/2 cup flour
1 cup orange juice
2 tbsp runny honey
2 tbsp balsamic vinegar
1 tbsp chopped parsley
1 tsp salt
1/2 tsp ground black pepper
1 can sliced peaches (drained)
Dash olive oil / rapeseed oil or any other substitute

Directions

- Heat the oven to 180C / 350F.
- Make a mixture for dusting chicken - in a bowl mix flour, salt and pepper. Coat all the chicken pieces with the mixture.
- Next heat up a frying pan on medium, add a dash of olive oil or whatever oil you prefer, then fry the chicken browning all sides (this should take a few minutes). Remove the chicken from the frying pan into an ovenproof dish. Pour out any remaining oil from the frying pan, then pour in 1/4 cup of orange juice into the pan and continue frying for another minute, this will help deglaze the tasty bits that were stuck to the bottom of the pan. To help deglaze, scrape the bits from the bottom with a spatula. Once you are close to a syrupy mixture, pour it over the chicken.
- In a bowl, combine the remaining orange juice, honey, vinegar and parsley (mix it well), then pour it over the chicken.
- Cover the baking dish and bake for 45 minutes.
- Remove the dish from oven, add peaches, mix them in and return the dish to the oven. Bake for another 5 - 10 minutes.
