Baked Vegetables Topped with Mozzarella


Anwonderdul winter’s recipe full of veggie goodness. It’s so satisfying to eat this hot meal and feel good after - no heaviness, no lethargy, because all ingredients are natural and good for you. A fantastic recipe, try it.

This recipe serves 2.


2 carrots
1 beetroot
2 large potatoes (get marabella if you can)
2 courgettes
Seasoning (anything that you fancy)
Handful of grated mozzarella


Slice up all the ingredients fairly thinly.

Put all the ingredients in an ovenproof dish, splash some olive oil and put in some seasoning. Rub the oil and seasoning in with your hands, don’t worry if the colour beetroot gets onto other vegetables, that will look even better.

Preheat oven to 200c, stick the dish into the oven for approx 50 mins, then remove, sprinkle some grated mozzarella on top and fire it all back into the oven for another 5-10 mins until the cheese melts and starts to brown a little.

Remove from oven and serve.
