Japanese Biscuits


Description

Enjoy simple Japanese cookies made from minimal of amount of ingredients. Decoration is choice of yours, I put some hazelnuts on top of each one to celebrate Valentines. But choice is yours.

Ingredients

50g unsalted butter
30g low GI sugar
1/8 tsp sea salt
5g lemon peel (chopped)
¼ tsp lemon juice
Vanilla essence (generous amount)
80g cake flour

Directions

Return the butter to room temperature.
Lemon skin is mellow so rub the lemon with salt.
Zest the lemon or peel and chop the lemon skin.
Preheat the oven to 170C.

1. Put the butter, low GI sugar, salt in a bowl and gently mix with hand mixer.

2. Add lemon peel, lemon juice and vanilla extract. Mix well.

3. Add sifted cake flour to the mixture and press together with a rubber spatula.

4. Put in a plastic bag, stretch into 1 mm thick rectangle with a rolling pin and rest in refrigerator (for about 60 min.)

5. Open the plastic bag and cut the dough into 12 squares. Make several holes on the surface with bamboo skewers.

6. Place on baking sheet and bake in the oven at 170 degrees for 23 min.
