Description
Pancakes, tasty pancakes. You can have them for breakfast, lunch, dinner or a snack.. in fact you can have them anytime. They are a tasty treat for anyone in the family. The kids especially love them.
Ingredients
300g pumpkin, grated
2 eggs
3-4 tbsp milk
2-3 tbsp sugar
10-12 tbsp flour
Oil for frying
Jam of your choice
Directions
- Get a bowl and grate the pumpkin if not already done.
- Separate egg whites and yolks. Mix the yolks with sugar and beat the whites well. Ideally do this in separate bowls.
- Add milk, flour egg yolks and whites to the pumpkin bowl. Mix all well.
- Heat up a frying pan on low/medium, make small pancakes and fry until golden, approx. 1 min per side should be sufficient.
- Remove from frying pan and serve with your favourite jam.
