Primary School Cake


Description

Old school cake that was served in primary school in the early 2000's.

Ingredients

Ingredients
• 300g butter
• 300g caster sugar
• 300g self-rising flour
• 5 eggs
• 95ml milk
• 1tsp vanilla essence

For the icing you’ll need
• 400g icing sugar
• 8tbs milk
• Sprinkles

If you don’t have self-rising flour, then just use normal flour and add 4-5 teaspoons of baking powder.

You will also need baking tray around 30 x 20 cm and greaseproof / baking paper.

An electric whisk is also really handy but not absolutely necessary.

Feel free to half all of the ingredients if you are looking to make a smaller cake.

Directions

1. Preheat the oven to 160 degrees F or mark 3 and line your baking tin with the baking paper. A tip to get the paper to stick to the tin, rather than pop up, is to line the tin with a bit of butter;
2. Cream the butter and sugar together until smooth, adding in the eggs and mixing them in one by one. The butter should ideally be room temperature and not completely melted and runny;
3. Add in the flour slowly, adding small bits at a time and mixing them in in order to ensure that the mixture is smooth;
4. Add in the milk and vanilla essence;
5. Pour the mixture into the tin and bake for around 25-30 minutes; and
6. To make the icing, just add the milk to the sugar and mix. If you would prefer a runnier consistency, then just add more milk.
