Description
This is an traditional and original Spanish Canutos recipe from the north of Spain - Gijon. Kindly provided by our amigo Miguel.
Ingredients
3 x large eggs
160g x sugar
550g x plain flour
10g x baking powder
120ml x milk
120ml x sunflower oil (yes, this is the correct quantity of oil!)
10g x lemon juice
1 x lemon zest of 1 lemon
Icing sugar for dusting
Directions
- Mix flour and baking powder by hand with a spoon in a bowl.
- In another bowl, mix the rest of the ingredients (except the icing sugar). Then add the flour and baking powder mix into the bowl slowly/in stages while mixing it all together. You could add 1/3 at a time, just to make sure things don't clump together and mix out evenly. Initially mix it with a spoon, then when the dough stiffens up, start mixing by hand. The dough should resemble that of a pastry dough. The whole mixing process should take approx. 7 - 10 minutes.
- Divide into small pieces and make finger shape no wider than 2cm. Remember, they will become bigger when you fry them.
- Finally, heat up a saucepan and add enough oil so that it will fully cover the biscuits. When the oil is piping hot, set the temperature of the pan to low. Then add 2 - 3 biscuits at a time. Fry until golden, and remove, place on a rack or a paper towel to dry. Sprinkle icing sugar over the biscuits while they are still hot.
- Repeat the process reusing the oil for the remaining biscuits.
- Serve and enjoy.
