Mexican Meatball Tortillas with Avocado Salsa

Enjoy these chicken meatballs wrapped in a warm tortilla with fresh salad for a quick family dinner.

Ingredients

Mexican meatball tortillas:
500 g chicken mince
1 sachet burrito seasoning
1 egg
1 clove garlic, crushed
2 tbsp olive oil
6 flour tortillas
6 butter lettuce leaves
2 tomatoes, cut into thin wedges
Sour cream, to serve

Avocado salsa:
1 avocado, stone removed, peeled, finely chopped
1 tbsp coriander leaves
1 tbsp lime juice
1 spring onion, thinly sliced

Directions

1. In a large bowl, combine mince, seasoning, egg and garlic. Mix well. Using wet hands, roll into walnut-sized balls. Arrange on a tray. Chill 20 min.

2. Heat oil in a large frying pan on high. Cook meatballs 7-8 min, turning occasionally, until browned and cooked through.

3. Meanwhile, make salsa:
In a bowl, combine all ingredients. Mix gently. Season to taste.

4. Line each tortilla with lettuce leaves. Top each with 3-4 meatballs, tomato and avocado salsa. Wrap tortillas. Serve with sour cream.
