Pelmeni - Dumpling Soup


Description

If you have frozen pelmeni--koldunai--dumplings and have frozen, there longer way to go to the soup!

Ingredients

2 tbsp olive oil
2 medium carrots
1/2 large onion
1 cup frozen sweet corn
3 qt chicken broth
1 lb pelmeni
1/2 cup spring onions, chopped
3 tbsp fresh parsley, chopped

Directions

1. Dice onion and carrots into very tiny pieces. Preheat the pot with olive oil, place onions and carrots. Saute until golden brown.

2. Add the sweetcorn and chicken broth to the pot. Bring broth to a boil.

3. Add dumplings and spring onions, and cook for about 20 min. All dumplings should float to the top once they are cooked.

4. Add parsley to the soup.
