Cinnamon Rhubarb Pie / Rhubarb Cake

What better way to relax than with a rhubarb cake. To me making something out of rhubarb sounds almost exotic. In my younger days I used to enjoy freshly picked rhubarb from the garden, now we grew some rhubarb and freshly picked it, which brought back these memories. So here we go with a cake using these freshly picked rhubarb sticks!

This delicious cake is moist and is full of taste of rhubarb. It goes well with tea or coffee.

Ingredients

350g rhubarb
3 large eggs
120g sugar
130g white flour
1 tsp baking powder
dash of vanilla essence
3 tbsp olive oil
2 tbsp cinnamon and sugar mix (50/50)
dash of salt

Directions

- Peel the rhubarb sticks and cut them up into small pieces, then mix with cinnamon and sugar mix.
- In a separate bowl, using a mixer, mix eggs, sugar and salt until the mass rises by a fair bit and becomes fluffy and thick. Mix in the oil.
- Carefully fold in flour and baking powder a little at a time with a spoon, taking care that the dough does not fall in.
- Add 2/3 of mixture into a baking tray, add rhubarb, then cover with remaining 1/3.
- Stick it into a preheated oven at 190C for approx. 40 minutes. It is done when you prick it with a toothpick and nothing sticks to it.
