Vegan Spiced Rice Pudding


Description

Rice pudding brings up a wonderful memories of my mum producing a large glass casserole dish full of steaming, creamy rice pudding she had just pulled from the oven.

Ingredients

100g pudding rice
600ml soya milk, sweetened, or other dairy-free alternative
60g caster sugar
1/2 tsp vanilla extract
1 pinch of ground cinnamon
1 pinch of ground ginger
Cinnamon stick, grated (optional)

Directions

1. Place the rice in a heavy based pan, then add all the other ingredients, except for the fresh cinnamon. Cook gently for an hour, stirring regularly. Add more soya milk, if required.

2. Once the rice is soft, serve topped with freshly grated cinnamon.
