Classic Russian Cake - Keks Stolychnyj


Description

This cake is moist, delicious and easy to make. The taste of this keks brings great memories of my childhood. Goes really well with a cup of tea or coffee as a treat.

Ingredients

130 g butter- room temperature
3/4 cup sugar
3 eggs
3/4 cup raisins
1 cup all-purpose flour
3/4 tsp baking powder
1 tsp vanilla extract
1 tbsp powdered sugar
1/2 tsp salt

Directions

1. Preheat the oven to 325 F (170 C).

2. In a bowl, cream the butter and sugar until sugar dissolves and the mixture becomes creamy and fluffy; add eggs one at a time, mixing well after each addition.
Add vanilla, salt and mix.

3. In a separate bowl stir raisins and baking powder into the flour, and mix until raisins are evenly coated.

4. Slowly add flour mixture to the butter mixture, mix thoroughly.
