Chebureki – Lithuanian Čeburekai


Description

Enjoy this national dish of Crimean Tatar cuisine. They very are popular as snack and street food throughout the Caucasus, Central Asia, Russia, Ukraine, Eastern Europe, as well as with the Crimean Tatar diasporas in Turkey and Romania.

Ingredients

200ml water
50ml vegetable oil
1tsp salt
0.5tsp sugar
450g plain four
Vegetable oil for frying

For the meat:
200g pork mince
200g beef mince (you can use only pork mince)
200g of brown onions/diced or minced
100 -150ml water
Salt and pepper
Parsley, dill, other greens as desire

Directions

1. Place flour into bowl.

2. Add salt and sugar.

3. Add water.

4. Add vegetable oil.

5. Make a dough.

6. Wrap in cling film and leave to rest for 30-40 min.


For the meat:
1. Dice or mince onions and dice the greens. Add salt and pepper, Mix everything together. Slowly add water into meat mixture, till nicely absorbed. The consistency should become similar to soured cream.

2. Then make a little circle and place the meat on one side (same as you do for dumplings). Cover with the other side of the circle and secure ends with a fork. Pour some oil, approx 2-3 cm of frying pan and fry for 3 -5 min each side on a moderate heat.
