Rhubarb Syrup


Description

Enjoy light and refreshing drink - perfect for a hot day. It would be amazing with a bit of St. Germain or even just with some vodka or some club soda and a squeeze of lime or even some of delicate gin. The flavour is definitely mild, so you want to pair it with something that won’t overshadow it too much.

Ingredients

2 1/2 cups chopped rhubarb
1 1/2 cups of sugar
1 cup of water

Directions

1. Simmer all ingredients for about 10 min.

2. When the rhubarb was sufficiently broken down, line a mesh strainer with a couple layers of cheesecloth (you could do without, but your syrup might not be as clear) and pour the rhubarb mass in.

3. Let it sit for about 15 min until you have about 2 cups of syrup (the picture was taken while it was still dripping down, there was almost exactly 2 cups when I was done). Store it in the cute little jar you have and you are done! Enjoying it with some sparkling water!
