Blue Cheese & Spinach Omelette


Description

Enjoy this simple and healthy omelette with cheese and spinach. You can omit cheese or use your own favourite. Highly recommended for those with Iron deficiency.

Ingredients

3 eggs
4,5 oz fresh spinach (125 g)
1 oz stilton blue cheese (30 g), crumbled (optional or your favourite)
Splash of olive oil or small knob of butter
Ground nutmeg (small pinch, optional)
Salt and pepper

Directions

1. Break the eggs in a small mixing bowl and add the splash of water or milk. Season the egg mixture with a little pepper, nutmeg and salt to taste, and beat well. Cook for 3 min.

2 Add spinach and cheese on top of the egg mixture when it set like a pancake and fold omelette in half.
